During the Shosho (”managable heat”) microseason,  heat starts to die down, cotton flowers bloom, and rice ripens.

Ichiju 一汁 Chestnut soup, pickled sakura leaf, almond milk jelly 

Issai 一菜 Aka ebi ceviche, ginger milk, togarashi 

Nisai 二菜 Sanma escabeche, shinmai, herbs, nashi puree

Sansai 三菜 Moriheya dumplings, braised wagyu sauce, persimmon cream 

Dessert Pink peppercorn panna cotta, grapes, new ginger syrup, butter crumbs
